- 1 kg pork ribs or pork belly, cut into chunks

- 1 large onion, quartered

- 2 medium tomatoes, quartered

- 1 medium-sized daikon radish (labanos), peeled and sliced

- 2 pieces eggplants, sliced

- 1 bunch string beans (sitaw), cut into 2-inch lengths

- 1 bunch kangkong (water spinach) or spinach

- 3-4 pieces green chili peppers (siling pangsigang), optional

- 1 packet (40-50 grams) sinigang mix (tamarind soup base)

- Fish sauce (patis), to taste

- Salt and pepper, to taste

- Water

- Cooking oil


Instructions:

1. Prepare the Pork:

   - In a large pot, heat a little cooking oil over medium heat. Add the pork pieces and cook until lightly browned.

2. Add Aromatics:

   - Add the quartered onion and tomatoes to the pot. Sauté until the tomatoes are soft and the onions are translucent.

3. Boil the Broth:

   - Pour enough water into the pot to cover the meat. Bring to a boil and then lower the heat to simmer for about 1 to 1.5 hours or until the pork is tender.

4.  Add Vegetables:

   - Once the meat is tender, add the sliced daikon radish and cook for about 5 minutes.

5. Seasoning:

   - Add the sinigang mix (adjust according to package instructions for desired sourness), green chili peppers (if using), and fish sauce to taste. Simmer for another 5 minutes.

6. Add Remaining Vegetables:

   - Add the eggplant and string beans. Cook until the vegetables are tender, about 5-7 minutes.

7. Finish with Leafy Greens:

   - Add the kangkong or spinach and cook until wilted, about 1-2 minutes.

8. Adjust Seasoning:

   - Taste the sinigang and adjust seasoning with salt, pepper, or more fish sauce if needed.

9. Serve:

   - Serve hot with steamed rice. Enjoy the comforting flavors of sinigang na baboy with its sour and savory broth and tender pork alongside a variety of vegetables.
